BATATA VADA / ALOO KACHORI
Batata Vada
Ingredients:
For the Potato Filling:
- 5 large potatoes, boiled and mashed
- 1 tsp paprika powder
- ½ tsp cumin powder
- ¼ tsp garlic powder
- ½ tsp green chili paste
- 1 tsp crushed coriander powder
- 1 tbsp red chili flakes
- 1 tsp roughly crushed mustard seeds
- 1 tbsp oil
- 4-6 curry leaves
- Salt to taste
- Fresh coriander leaves, chopped
For the Batter:
- 1 ½ cups gram flour (besan)
- 1 tsp red chili powder
- ½ tsp turmeric powder
- ½ tsp baking soda
- Salt to taste
- Water (as needed)
For Frying:
- Oil for deep frying
Instructions:
1. Prepare the Potato Filling:
- Heat 1 tbsp oil in a pan and add mustard seeds and curry leaves. Let them crackle for a few seconds.
- Pour this tempering over the mashed potatoes.
- Add paprika powder, cumin powder, garlic powder, green chili paste, crushed coriander powder, red chili flakes, salt, and fresh coriander leaves.
- Mix everything well until all the spices are evenly combined.
- Shape the mixture into small round patties (kebabs) and set aside.
2. Prepare the Batter:
- In a mixing bowl, add gram flour, red chili powder, turmeric powder, baking soda, and salt.
- Gradually add water to make a thick, smooth batter. Ensure there are no lumps.
3. Fry the Batata Vada:
- Heat oil in a deep frying pan over medium heat.
- Dip each potato patty into the batter, ensuring it is fully coated.
- Carefully place it in the hot oil and deep fry until golden brown and crispy.
- Remove and place on a kitchen towel to absorb excess oil.
4. Serve:
- Serve hot with imli ki chutney (tamarind chutney) and mint chutney for a delicious snack.
