Batata Vada

Ingredients:

For the Potato Filling:

  • 5 large potatoes, boiled and mashed
  • 1 tsp paprika powder
  • ½ tsp cumin powder
  • ¼ tsp garlic powder
  • ½ tsp green chili paste
  • 1 tsp crushed coriander powder
  • 1 tbsp red chili flakes
  • 1 tsp roughly crushed mustard seeds
  • 1 tbsp oil
  • 4-6 curry leaves
  • Salt to taste
  • Fresh coriander leaves, chopped

For the Batter:

  • 1 ½ cups gram flour (besan)
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • ½ tsp baking soda
  • Salt to taste
  • Water (as needed)

For Frying:

  • Oil for deep frying

Instructions:

1. Prepare the Potato Filling:

  1. Heat 1 tbsp oil in a pan and add mustard seeds and curry leaves. Let them crackle for a few seconds.
  2. Pour this tempering over the mashed potatoes.
  3. Add paprika powder, cumin powder, garlic powder, green chili paste, crushed coriander powder, red chili flakes, salt, and fresh coriander leaves.
  4. Mix everything well until all the spices are evenly combined.
  5. Shape the mixture into small round patties (kebabs) and set aside.

2. Prepare the Batter:

  1. In a mixing bowl, add gram flour, red chili powder, turmeric powder, baking soda, and salt.
  2. Gradually add water to make a thick, smooth batter. Ensure there are no lumps.

3. Fry the Batata Vada:

  1. Heat oil in a deep frying pan over medium heat.
  2. Dip each potato patty into the batter, ensuring it is fully coated.
  3. Carefully place it in the hot oil and deep fry until golden brown and crispy.
  4. Remove and place on a kitchen towel to absorb excess oil.

4. Serve:

  • Serve hot with imli ki chutney (tamarind chutney) and mint chutney for a delicious snack.
