CHICKEN FAJITA RICE
Fajita Chicken Rice Recipe
Ingredients:
- Boneless chicken – 250 grams (cut into cubes)
- Onion powder – 1 teaspoon
- Garlic powder – 1 teaspoon
- Paprika powder – 1 teaspoon
- Red chili powder – 1 teaspoon
- Black pepper powder – 1 teaspoon
- Cumin powder – 1 teaspoon
- Salt – 1 teaspoon (or to taste)
- Rice – 2 cups (boiled)
- Lemon juice – ½ teaspoon
- Green, red, and yellow bell peppers – 1 cup (chopped)
- Carrots – 2 (chopped)
- Onions – 2 medium (sliced)
- Tomato puree – from 6 medium tomatoes
- Oil – ½ cup
- Water – as needed
Instructions:

Prepare Fajita Seasoning:
In a bowl, mix together onion powder, garlic powder, paprika powder, red chili powder, black pepper powder, cumin powder, and salt. Set aside. -
Marinate the Chicken:
- Cut the boneless chicken into cubes.
- Add half of the prepared fajita seasoning and ½ teaspoon lemon juice to the chicken.
- Mix well and marinate for 30 minutes.

Cook the Chicken:
- Heat ½ cup of oil in a wok or large pan over medium heat.
- Add the marinated chicken and stir-fry until the chicken is fully cooked.
- Add a little water if needed to keep it moist.

Stir-Fry the Vegetables:
- Add the sliced onions, chopped bell peppers (green, red, yellow), and carrots to the chicken.
- Stir-fry for a few minutes until the vegetables are slightly tender but still crisp.

Add Tomato Puree:
- Pour in the tomato puree and stir well.
- Add the remaining fajita seasoning to the mixture.
- Cook on low flame for 10 minutes, adding a little water if necessary to avoid sticking.

Combine with Rice:
- After 10 minutes, add the boiled rice to the chicken and vegetable mixture.
- Gently mix everything together to evenly coat the rice with the spices and sauce.
- Cover and cook on low flame for another 15 minutes.
