CHICKEN FAJITA RICE



Fajita Chicken Rice Recipe

Ingredients:

  • Boneless chicken – 250 grams (cut into cubes)
  • Onion powder – 1 teaspoon
  • Garlic powder – 1 teaspoon
  • Paprika powder – 1 teaspoon
  • Red chili powder – 1 teaspoon
  • Black pepper powder – 1 teaspoon
  • Cumin powder – 1 teaspoon
  • Salt – 1 teaspoon (or to taste)
  • Rice – 2 cups (boiled)
  • Lemon juice – ½ teaspoon
  • Green, red, and yellow bell peppers – 1 cup (chopped)
  • Carrots – 2 (chopped)
  • Onions – 2 medium (sliced)
  • Tomato puree – from 6 medium tomatoes
  • Oil – ½ cup
  • Water – as needed

Instructions:

  1. Prepare Fajita Seasoning:
    In a bowl, mix together onion powder, garlic powder, paprika powder, red chili powder, black pepper powder, cumin powder, and salt. Set aside.

  2. Marinate the Chicken:

    • Cut the boneless chicken into cubes.
    • Add half of the prepared fajita seasoning and ½ teaspoon lemon juice to the chicken.
    • Mix well and marinate for 30 minutes.
  3. Cook the Chicken:

    • Heat ½ cup of oil in a wok or large pan over medium heat.
    • Add the marinated chicken and stir-fry until the chicken is fully cooked.
    • Add a little water if needed to keep it moist.
  4. Stir-Fry the Vegetables:

    • Add the sliced onions, chopped bell peppers (green, red, yellow), and carrots to the chicken.
    • Stir-fry for a few minutes until the vegetables are slightly tender but still crisp.
  5. Add Tomato Puree:

    • Pour in the tomato puree and stir well.
    • Add the remaining fajita seasoning to the mixture.
    • Cook on low flame for 10 minutes, adding a little water if necessary to avoid sticking.
  6. Combine with Rice:

    • After 10 minutes, add the boiled rice to the chicken and vegetable mixture.
    • Gently mix everything together to evenly coat the rice with the spices and sauce.
    • Cover and cook on low flame for another 15 minutes.
  7. Serve:

    • Fluff the rice gently before serving.
